چکیده

Pulp-enriched powder (POPP) was obtained from olive pomace solid fraction, a derived the new value chain established for by-products. As multifunctional powder, POPP retains several bioactive compounds (fatty acids, dietary fibre and phenolics) under potential synergic interaction, even more, reactive throughout digestion. So, in this study, multifunctionality of evaluated after gastrointestinal tract. A significant loss phenolics occurred during oral digestion (62.48%). However, role as phenolics’ carrier its possible liberation stomach allowed recovering amount (77.11%) bioaccessibility index at least 50% (mainly tyrosol glucoside). also provides high content mainly insoluble (69.68 g/100 g dry weight) linked to substantial bound (7.63 mg gallic acid equivalents/g weight), with positive effect on fatty acids [decreased saturated (5–6%) facilitated unsaturated (4–11%)]. PCA analysis became evident negative simulated upon loss. Despite all effects composition, showed be bioaccessible amount, associated retained colon have exert gut health benefits.

Guava (Psidium guajava L.) Powder as an Antioxidant Dietary Fibre in Sheep Meat Nuggets

This study was conducted to explore the antioxidant potential and functional value of guava (Psidium guajava L.) powder in muscle foods. Guava powder was used as a source of antioxidant dietary fibre in sheep meat nuggets at two different levels i.e., 0.5% (Treatment I) and 1.0% (Treatment II) and its effect was evaluated against control. Guava powder is rich in dietary fibre (43.21%), phenolic...

Wine grape pomace as antioxidant dietary fibre for enhancing nutritional value and improving storability of yogurt and salad dressing.

Wine grape pomace (WGP) as a source of antioxidant dietary fibre (ADF) was fortified in yogurt (Y), Italian (I) and Thousand Island (T) salad dressings. During the 3 weeks of storage at 4 °C, viscosity and pH of WGP-Y increased and decreased, respectively, but syneresis and lactic acid percentage of WGP-Y and pH of WGP-I and WGP-T were stable. Adding WGP resulted in 35-65% reduction of peroxide...

3. SACN have reviewed the available scientific evidence for components under consideration for inclusion in the Codex definition on dietary fibre for nutrition labelling purposes, using the SACN frame work for assessing evidence (SACN 2002). These components include total fibre, non starch polysaccharides, fibre components from cereal, fibre components from fruit and vegetables, starch, resista...

On defining dietary fibre.

Establishing a definition for dietary fibre has historically been a balance between nutrition knowledge and analytical method capabilities. While the most widely accepted physiologically-based definitions have generally been accurate in defining the dietary fibre in foods, scientists and regulators have tended, in practice, to rely on analytical procedures as the definitional basis in fact. As ...

Dietary fibre analysis.

The 'gold standard' method for the measurement of total dietary fibre is that of the Association of Official Analytical Chemists (2000; method 985.29). This procedure has been modified to allow measurement of soluble and insoluble dietary fibre, and buffers employed have been improved. However, the recognition of the fact that non-digestible oligosaccharides and resistant starch also behave phy...
